Fried Rice

WITH A SIDE OF green beans with fermented tofu

WHAT YOU NEED

  • 2-3 C uncooked rice

  • 6 eggs

  • 2 bunches bok choy

  • 1 C bean sprouts

  • 1 C snap peas

  • 1 bunch green onion

  • 1 medium carrot (or 2-3 small ones)

  • 1/2 C bbq pork

  • 2 inches ginger

  • 3-4 garlic cloves

  • soy sauce

  • black bean sauce

  • sesame oil

  • fish sauce

  • peanut oil

Step 1: COOK RICE & prepare protein

Cook rice according to the directions on the package and your rice cooker or pot.

Chop the bbq pork.

Scramble the eggs.

Step 2: PREPARE THE VEGGIEs

Chop the bok choy, bean sprouts, snap peas, and green onion. Peel the carrots, and then use peeler to cut them into small, thin pieces.

Peel and chop ginger and garlic. Aim for a 2:1 ratio of ginger to garlic. (You can’t have too much ginger in this dish!)

Step 3: STIR FRY veggies & rice

Heat oil in wok. When hot, add in scrambled egg.

Swirl the egg around the wok to cook it, using the spatula to cut it into pieces. Remove egg from wok and set aside.

Add more oil to work. When hot, add ginger and garlic.

Sauté until ginger and garlic start to brown, then add in bok choy and carrots. Stir fry.

Add snap peas, bean sprouts, and green onion. Stir fry.

Add the sauces, continuing to stir fry in between each sauce:

  • A few splashes of soy sauce

  • A little black bean sauce

  • A little fish sauce

Add bbq pork. Stir fry.

Add cooked rice and a couple more splashes of soy sauce. Use the spatula to break up the chunks of rice.

Add cooked egg. Stir fry until all of the rice has a little color to it (no white clumps of rice remaining). Remove from heat.

Cook time: 2 minutes for egg, 4 minutes for veggies, 4 minutes for rice

Green Beans with Fermented Tofu

WHAT YOU NEED

  • 1-2 lbs green beans

  • 1 onion

  • 2-3 garlic cloves

  • 5-6 cubes fermented tofu

  • sherry (not pictured, alternative: water or liquid from the fermented tofu)

  • peanut oil (not pictured)

Step 1: PREPARE THE VEGGIES

Trim ends of green beans and discard. Cut into pieces 2-3 inches in length.

Cut onion in wide pieces 2-3 inches in length.

Peel and chop garlic.

Step 2: STIR FRY

Heat oil in wok. When hot, add in garlic.

Sauté until garlic starts to brown, then add in green beans and onion. Stir fry.

Add a splash of sherry (alternative: water or liquid from the fermented tofu).

Add the fermented tofu. Stir fry to coat the beans and onion. (You can mash up the cubes ahead of time or as you are stir frying.)

*Optional: Add a small splash of soy sauce to add a little saltiness.

Taste test the green beans for your desired crunchiness. Remove from heat.

Cook time: 4 minutes
